Have you ever scrolled through Pinterest obsessing over mouth-watering treats, but never had the chance to make them? Well, problem solved. Saint Patrick’s Day treats have been made and tested, here is the low down on the process on what worked and what needs to be fixed. 

Oreo Truffles

First off, Mint Oreo Truffles. These fun treats only required three ingredients: mint Oreos, cream cheese and candy melts. I decided to use white chocolate chips and food coloring as a substitute for candy melts. Before blending the Oreos into crumbs, make sure to crush the cookies into small pieces to make the blending easier. Rolling the mixture into balls is a simple. After, freeze the balls and melt the chocolate. Melting the chocolate chips was difficult because the product was not thin enough, which made dipping hard. I would recommend using the stove for this instead of a microwave. When your candy melts or chocolate is melted, cover the truffles and enjoy!

Ingredients

1 package Mint Oreo cookies

1 package (8 ounce) Cream Cheese, softened

Candy Coating – Candy Melts or Chocolate Chips

Directions:

Crush Oreos into fine crumbs in a blender or food processor. In a large bowl, place softened cream cheese and add the Oreo crumbs; combine well. Roll into balls and place on a cookie sheet lined with wax paper and freeze until treats are frozen. Melt chocolate according to instructions on package. Working with a few truffles at a time, coat truffles in chocolate.

Dipped Pretzles

Next, dipped pretzels! All you need are pretzel rods and some melted chocolate. When making this, I also struggled with the consistency of the chocolate because the thickness of it made it hard to dip. I would also make sure you have a tall bowl or glass to make dipping easier. One thing that I wished I had was a stand to set the pretzels in to dry.

Ingredients:

1 bag pretzel rods

White Chocolate Chips or Candy Melts

Assorted sprinkles

Directions:

Melt Chocolate according to instructions on package. Dip a pretzel rod in the candy coating, letting excess coating drip off back into the container. Sprinkle immediately with desired sprinkles. Let dry on cookie sheet or rack.

Soda Bread Cookies

Last but not least, the Irish Soda Bread Cookies! These were by far the easiest of the others. Most ingredients for this recipe, you may already have in your pantry. The end result was tasty, but the raisins masked a lot of the other flavor. Overall, if you are looking for a quick, traditional Irish recipe to enjoy, these are a great pick.

Ingredients:

2 cups all-purpose flour

3/4 cup white sugar

1/2 teaspoon baking soda

1/2 cup butter1/4 cup buttermilk

1 egg

 1/4 teaspoon salt

½ cup raisins

Directions:
Preheat oven to 350F°. Combine dry ingredients in a mixing bowl. Mix dry ingredients with butter along with raisins. Pour in milk and mix with a fork to make a soft dough (may need a little more milk). Roll dough on floured surface into balls. Set on cookie sheet and bake for 12 to 14 minutes or until slightly browned.
